RECIPESHISTORY
La Chandeleur was introduced to me two years ago by my university French professor. A woman of the world, she introduced this piece of culture into my life, and I have chosen to hold onto it since.
What does this have to do with alcohol?
To ensure this remains related to my niche, I decided to makes Crêpes Suzette. These crepes are made by wrapping sweetened, whipped, orange butter in a light crepe, and then igniting the French spirits cognac and Grand Marnier. The enflamed liquor is poured over the crepes and makes a thick sauce when it interacts with the orange butter.
Ingredients
Crêpes
- your favorite crêpe recipe or ready/pre-made crêpes
Orange Butter
- 6 tbsp butter
- ¼ cup sugar
- 2 tbsp orange zest
- ⅓ cup orange juice
- ¼ tsp vanilla extract
Alcohol Blend
- ½ cup Grand Marnier
- ½ cup of Cognac
Directions
1. Preheat oven to 500 F (broil)
2. Prepare crêpes.
3. Whip butter, sugar, orange zest, vanilla extract by hand or in a small food processor.
4. Place one to two teaspoon(s) of orange butter into each crêpe, and fold the crêpe into a triangle.
5. Arrange your crepes on a baking sheet and top with sugar.
6. Broil for about two minutes or until they begin to brown.
7. Prepare to flambée by mixing alcohol blend into a container, either a stemmed glass or a spouted container with a handle.
8. Ignite the alcohol blend, and pour over the crepes.
9. Allow the crepes to burn until the alcohol burns off.
